Wash and dry potatoes, then peel and cut them into evenly-sized cubes. Place into a large pot of cold, salted water and bring to a boil. Reduce heat and cook until potatoes are fork tender, about 20-25 minutes. Remove from heat, drain and transfer potatoes to a large bowl.
In a small bowl, whisk together remaining ingredients. Stir mixture into bowl of potatoes, incorporating all ingredients. Transfer potato salad to a serving bowl. Enjoy!
