Skillet Potatoes with Apples and Sausage
Makes 6 Servings
Prep Time 10 Minutes | Cooking Time 40 Minutes
1.5lb bag of EarthFresh Baby Red Organic Potatoes
1 tbsp. (15 mL) olive oil
3 tbsp. (45 mL) minced shallot
1 cup (250 mL) chopped granny smith apple
1lb honey garlic sausage, sliced
1 tbsp. (15 mL) maple syrup
2 tsp. (10 mL) dijon mustard
1 tbsp. (15 mL) dried thyme
½ tsp. (2.5 mL) salt
½ tsp. (2.5 mL) pepper
Wash and cut the potatoes in half, set aside. Add the olive oil to a large skillet over medium heat. Add the potatoes, shallots, apples, sausage, maple syrup, dijon mustard, thyme, salt and pepper. Mix to incorporate all ingredients.
Reduce heat to low, cover skillet and cook for 40 minutes until potatoes are fork tender.
Transfer to a serving dish and enjoy!
