Preheat oven to 350°F (180°C).
Wash and dry potatoes, then cut into halves. Place into a large bowl and toss with garlic, olive oil, 1 tbsp honey, chili powder and salt.
Spread the potato and garlic mixture evenly onto a baking sheet and place into oven. Roast for 30-40 minutes, until potatoes are fork tender and golden brown.
Remove from oven and transfer to a serving dish. Add avocado and drizzle with remaining honey. Garnish with cilantro and enjoy!
