Wash and peel potatoes, then cut into quarters. Add to a large pot of cold, salted water and bring to a boil. Reduce heat and cook potatoes until fork tender, about 20-25 minutes. Remove from heat, drain and transfer to a bowl.
Add olive oil to a medium frying pan over medium heat. Add garlic and cook until browned and crispy, about 6 minutes. Add thyme and cook for an additional 2 minutes. Remove from heat.
Add roasted garlic and thyme to the bowl of potatoes and mash to incorporate all ingredients. Transfer to a serving bowl and enjoy!
