This pulled pork nacho recipe is a healthy alternative and a delicious twist to classic nachos. Make your own nacho chips with EarthFresh Russet Potatoes for a fresh and healthy snack or meal. Garnish with pulled pork and coleslaw for the perfect finishing touch.

Ingredients

  • 4 EarthFresh Russet Potatoes
  • 2 tbsp olive oil
  • 2 cups pulled pork
  • ½ cup BBQ sauce, any brand
  • 1 package fresh coleslaw mix
  • 3 tbsp canola oil
  • 1 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 1 jalapeño, sliced

Directions

Preheat oven to 350°F (180°C).

Wash and dry potatoes, then slice using a mandolin. In a large bowl, toss the sliced potatoes with olive oil. Set aside.

In a medium bowl, mix pulled pork with BBQ sauce. Set aside.

In another medium bowl, stir together the fresh coleslaw mix, canola oil, rice vinegar, salt and pepper. Set aside.

Transfer potatoes to a baking sheet lined with parchment paper, spreading carefully to avoid overlap. Place into the oven. Bake for 40 minutes, or until potatoes are crispy and golden brown.

Remove from oven and top with pulled pork and coleslaw. Garnish with sliced jalapeños. Enjoy!
