Potatoes with Italian Sausage and Peppers
2 lbs. EarthFresh Red Potatoes - Best for Roasting
1 large red onion
3 peppers: red/yellow/orange (1 of each).
1 tsp pepper
2 Tbsp olive oil
1/2 tsp garlic powder
3 Italian sausages, each link cut into 6-7 slices
Salt to tasteDirections:
Preheat oven to 375°F and lightly coat a non-stick baking sheet.
Cut the potatoes, peppers and onion into chunks and place in a large bowl. Add olive oil, pepper and garlic powder. Mix well and transfer ingredients onto baking sheet. Cook for 30 minutes.
Remove baking sheet, add sausage and bake for another 25 minutes. Remove, serve and enjoy!
Optional: Add a fresh piece of basil for garnish.
TIP: For a healthier dish, replace the Italian sausage with turkey sausage.
