Potato Salad with Maple Herb Vinaigrette

Makes 4 Servings
1/2 bag EarthFresh Vitality Potatoes
4 cups fresh microgreens
6 Tbsp olive oil
3 Tbsp maple syrup
1 Tbsp grainy mustard
2 Tbsp brown sugar
2 Tbsp minced garlic
1 Tbsp minced rosemary
1 Tbsp minced thyme
Wash, dry, and cut the potatoes in half. In a large pot add the potatoes to cold salted water and bring to a boil. Reduce heat and cook potatoes until fork tender, roughly seven to ten minutes. Strain the potatoes and set aside allowing the potatoes to cool.
To make the vinaigrette, whisk together the olive oil, maple syrup, grainy mustard, brown sugar, minced garlic, rosemary and thyme. Set aside.
In a large bowl, toss together the maple herb vinaigrette, potatoes, and microgreens. Transfer to a serving bowl and serve.
