Potato Halibut Cakes with homemade tarter sauce
Makes 8 cakes

1 EarthFresh Yellow Potato, Best for Mashing
4 oz. halibut fillet, cooked
2 roasted red peppers, finely chopped
1 carrot, finely chopped
½ onion, finely chopped
½ cup (125 mL) low-fat mayonnaise
½ cup (125 mL) bread crumbs
½ tsp. (2.5 mL) worchestire sauce
1 tsp. (5 mL) hot sauce
3 tsp. (15 mL) fresh chopped parsley
1 tsp. (5 mL) salt
1 tsp. (5 mL) pepper
Fat Free Tarter Sauce - see recipe below
1 cup (250 mL) whole wheat flour
2 eggs, whisked
1 cup (250 mL) breadcrumbs
¼ cup (60 mL) olive oil
Use three separate bowls, add to each bowl the flour, egg and breadcrumbs. Set aside.
Fat Free Tarter Sauce:
½ cup (125 mL) fat-free mayonnaise
3 tbsp. (45 mL) relish
¼ cup (60 mL) fresh chopped green onion
1 tbsp. (15 mL) red wine vinegar
½ tsp. (2.5 mL) salt
½ tsp. (2.5 mL) pepper
In a small bowl whisk together the mayonnaise, relish, chopped green onion, red wine vinegar, salt and pepper. Whisk until all ingredients are incorporated. Transfer the Tarter Sauce into serving bowl. Cover and chill in the refrigerator.
Wash, dry and cut the potato into bite size pieces. Place the chopped potatoes into a pot of cold, salted water and bring to a boil. Reduce heat and continue to cook for 10 minutes. Potatoes will be done when fork tender. Remove potatoes from heat, strain and set aside.
Combine the potatoes, cooked halibut, roasted peppers, carrots, onions, mayonnaise, egg, worchestire sauce, hot sauce, parsley, salt and pepper. Mix all ingredients together. Mould into 1 x 3 inch rounds. Place each piece onto a rimmed baking sheet. Set aside.
The breading station - Press each Potato Halibut Cake into the flour then the whisked eggs and lastly the breadcrumbs, ensuring all surfaces are covered with the breadcrumbs.
Heat olive oil in a large skillet over medium heat. Add the Potato Halibut Cakes three at a time and fry until golden brown, about 5 minutes per side.
Remove from heat and transfer to a serving platter. Squeeze fresh lime over each cake and serve with the fat-free tarter sauce.
