Potato Caprese Bites

This Canadian appetizer is inspired by Canada's 150th Birthday. Not only healthy and simple to prepare, you can make it in under 15 minutes!
Ingredients:
1.5 lb bag EarthFresh Baby Red Potatoes – Product of Canada
6 small vine ripe tomatoes – Product of Ontario
2 packages Mozzarella Di Bufala – Product of Ontario
Black pepper, to taste – Product of Canada
Balsamic reduction, desired amount – Niagara Region
1 bunch fresh basil – Burlington, Ontario
Directions:
In a pot of cold, salted water add potatoes and bring to a boil. Cook until fork tender, remove, drain and set aside to cool completely.
Wash and dry the tomatoes, slice each one into four even pieces. Remove the cheese from the packaging, slice and dry each piece using a paper towel. Wash and pat try the basil. Set all ingredients aside while you wait for the potatoes to cool.
Once the potatoes have cooled, slice each potato into 1” slices and place on a serving platter. Top each potato with a piece of tomato and mozzarella. Drizzle with balsamic vinegar and garnish with a piece of basil. Sprinkle some pepper and enjoy!
