Oven Baked French Fries with Chimichurri Sauce
High in potassium, good source of Vitamin C, Vegetarian and Gluten-Free!
This recipe is a healthier alternative to deep fried fries.
6 EarthFresh Russet Potatoes, Best for Baking
1 Tbsp (30 ml) olive oil
½ tsp. (5 ml) salt
2 Tbsp (60 ml) olive oil
1 Tbsp (30 ml) red wine vinegar
½ tsp. (5 ml) lemon juice
2 cloves garlic, minced
¼ cup fresh parsley, chopped
½ cup fresh cilantro, chopped
1 Tbsp (30 ml) red pepper flakes
Pre-heat oven to 450 degrees F
Wash the potatoes and cut into French fries. Dry the fries and transfer to large bowl. Add olive oil and salt, tossing to evenly coat the fries. Transfer to a baking sheet and bake for 40-50 minutes until fries are crisp and golden brown. Half way through, flip the fries.
While the potatoes are cooking, add the olive oil, red wine vinegar, lemon juice and garlic to a bowl and whisk. Stir in the parsley, cilantro and red pepper flakes. Set aside.
When fries are done, remove from the oven and garnish with Chimichurri sauce.
