One Pan Chili Lime Chicken and Potatoes
Prep Time 10 Minutes | Cooking Time 50-60 Minutes
Makes 4 servings
1.5 lb EarthFresh Organic Baby Yellow Potatoes
1.5 lb EarthFresh Organic Baby Red Potatoes
1 cup chopped butternut squash
1 cup chicken stock
4 skinless boneless chicken breasts, cut into bite size pieces
1 large white onion, quartered
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 Tbsp cayenne pepper
1 Tbsp smoked paprika
1 Tbsp chili powder
1 lime, cut into wedges
½ chopped fresh cilantro
Pre-heat oven to 300°F.
Wash, dry and cut red and yellow potatoes into halves. Add cut potatoes, chicken stock, chicken, onions, salt, pepper, garlic powder, cayenne pepper, smoked paprika and chilli powder to a large bowl. Mix well to incorporate all ingredients.
Transfer mixed ingredients to a cast iron skillet, place into the oven and bake for 50-60 minutes.
Remove cast iron skillet from oven, garnish with fresh cilantro and lime wedges. Serve from skillet. Be careful, skillet will be hot! Enjoy!
