Kickin Cajun Hash
High in potassium, good source of Vitamin C, low in fat and loaded with fibre!
Great for breakfast or as a side dish! Vegetarian, vegan (without the egg) and Gluten-Free!
1.5 lb. bag of EarthFresh Mini Organic Yellow Potatoes
¼ cup olive oil, reserving 1 Tbsp
1 tsp. Chili powder
1 tsp. smoked paprika
1 tsp. ground cumin
1 tsp. oregano
1 tsp. thyme
1 tsp. onion powder
1 tsp. garlic powder
½ tsp. salt
OPTIONNEL: 1 large egg
Wash and dry potatoes. Cut each potato into four pieces quartering them; place the cut potatoes into a medium bowl. Add the 1 Tbsp of reserved olive oil and all the spices; mix gently until all the potatoes coated evenly.
Next, place a large skillet on the stove and add the remaining oil. Heat the oil over medium heat and when hot add the potatoes to the pan and sauté the potatoes for about 15 minutes, or until the potatoes are slightly crisp.
Potatoes will be done when fork tender. Toss them in the pan while cooking to promote even cooking and prevent burning. When potatoes are fully cooked transfer them to a serving dish and enjoy!
