Horseradish Aioli Roasted Red Potatoes

8 Green Giant Red Potatoes: Best for Roasting
¼ cup low-fat mayonnaise
2 Tbsp prepared horseradish
1 tsp lemon juice
1 tsp lemon zest
1 tsp salt
2 Tbsp chopped fresh parsley
Preheat oven to 350°F.
Wash, dry, peel and cut potatoes into halves. Add potatoes and olive oil to a large bowl. Stir to coat evenly. Transfer potatoes to a baking sheet and place into the oven. Roast potatoes for 30 minutes or until brown, crispy and fork tender. Remove roasted potatoes from the oven and transfer to a medium-sized bowl.
In the bowl of roasted potatoes, add in the low-fat mayonnaise, prepared horseradish, lemon juice and lemon zest. Mix well.
Transfer potatoes to a serving bowl. Garnish with chopped fresh parsley. Enjoy!
