This recipe is so easy and delicious. Simply toss the cut red potatoes and olive oil together, roast in the oven, and toss in a delicious horseradish aioli sauce. With their high levels of potassium, good source of vitamin C, and high source of fibre, these flavoured potatoes are the perfect side dish for any meal.

Ingredients

  • 8 EarthFresh Red Potatoes
  • ¼ cup low-fat mayonnaise
  • 2 tbsp prepared horseradish
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp salt
  • 2 tbsp fresh parsley, chopped

Directions

Preheat oven to 350°F (180°C).

Wash and dry potatoes, then peel and cut them into halves. Add potatoes and olive oil to a large bowl, stirring to coat evenly. Transfer to a baking sheet and place into the oven. Roast potatoes for 30 minutes or until brown, crispy and fork tender. Remove from the oven and transfer to a medium bowl.

Add mayonnaise, prepared horseradish, lemon juice and lemon zest. Mix well. Transfer potatoes to a serving bowl. Garnish with parsley. Enjoy!
