Holiday Tri-Colour Potatoes with Dried Cranberries

Makes 6 servings
1.5 lb EarthFresh Organic Mixed Baby Potatoes
1 Tbsp olive oil
1 Tbsp white balsamic vinegar
1 Tbsp orange juice
1 Tbsp honey
2 tsp chopped fresh mint
2 tsp orange zest
½ cup dried sweetened cranberries
Wash, dry, and cut potatoes into halves. Add potatoes to a large pot of cold, salted water and bring to a boil. Cook until potatoes are tender, but still firm (roughly 7-10 minutes). Drain potatoes and transfer to a medium bowl.
In a small bowl, whisk together the olive oil, white balsamic vinegar, orange juice, honey, chopped mint, orange zest and dried cranberries. Pour over potatoes and toss to coat evenly.
Transfer potatoes to a serving bowl. Serve immediately. Enjoy!
