Holiday Cheesy Mashed

Vegetarian and Gluten-Free!
High in potassium, good source of Vitamin C and loaded with fibre!
Yields 6-8
Ingredients:
8-10 EarthFresh Yellow Potatoes- Best for Mashing
2 garlic cloves
2 Tbsp butter, softened
2 Tbsp half and half cream
½ cup sour cream
½ cup Gruyere cheese, shredded
½ cup Swiss cheese, shredded
½ tsp. salt
Directions:
Wash, dry and cut the potatoes into even chunks. Place the potatoes and garlic into a large pot of cold, salted water. Bring to a boil, reduce heat to medium-low, cover and simmer until tender, roughly 15 minutes. Potatoes should be tender when pierced with a fork. Drain and transfer potatoes to a large glass bowl. Add butter, cream, sour cream, Gruyere and Swiss cheese and salt. Using a potatoes masher, mash the potatoes with all the ingredients. Transfer potatoes to a serving dish and serve immediately.
