Herbed Potato Stacks

Makes 8 potato stacks
4 EarthFresh Red Potatoes: Best for Roasting
2 Tbsp olive oil
1 tsp salt
2 tsp chopped fresh rosemary
2 tsp chopped fresh tarragon
2 tsp chopped fresh oregano
Preheat oven to 350°F.
Wash, dry and thinly slice each potato using a mandolin. Transfer the sliced potatoes to a medium bowl and stir in the olive oil and chopped herbs.
Spray a muffin tin with non-stick cooking oil. Layer 8-10 sliced potatoes in 8 of the muffin tin cups.
Place into a pre-heated oven and cook for 30-40 minutes or until potatoes are golden brown in colour and crispy.
Remove Herbed Potato Stacks from oven and transfer to a serving platter. Serve warm. Enjoy!
