Garlic and Chive Mashed Potatoes

Makes 8-10 servings
8 Green Giant Yellow Potatoes: Best for Mashing
½ cup Greek yogurt
¼ cup whole milk
2 Tbsp chopped fresh chives
1 Tbsp butter
1 Tbsp minced garlic
1 Tbsp lemon juice
½ tsp salt
Wash, dry, peel and chop potatoes. Add potatoes to a large pot of cold, salted water and bring to a boil. Cook until potatoes are tender (roughly 7-10 minutes). Strain water from the potatoes.
Transfer potatoes to a large bowl and add Greek yogurt, whole milk, chopped fresh chives, butter, minced garlic, lemon juice and salt. Using a potato masher, mash to incorporate all ingredients. Transfer potatoes to a serving bowl. Enjoy!
