Crockpot Tuscan Potato and Sausage Soup

Makes 6 Servings
3 Italian sausages
5 EarthFresh Potatoes of the World Polar White potatoes
1 large yellow onion, chopped
3 cloves garlic, minced
1 tsp each salt and pepper
5 cups chicken broth
1 bunch spinach
1 cup heavy cream
½ cup sun-dried tomatoes, drained and chopped
Peel and chop potatoes, squash, carrots and onion. Place into a slow cooker with garlic, vegetable broth, maple syrup, cinnamon, nutmeg and salt. Cover and cook on low for 7-8 hours or on high 4-5 hours.
Once cooked, add cream and use an immersion blender to puree the soup until smooth. Top with teaspoon of cream and salted pumpkin seeds. Enjoy!
