Brussels Sprout and Goat Cheese Crostini with Quick Pickled Red Onions

Ingredients

  • 1 package EarthFresh Fast. Fresh. Gourmet. Smoked Maple Brussels Sprouts
  • Fresh bread of choice, we used sourdough rye
  • 113g goat cheese
  • Quick pickled red onions

 

Quick Pickled Red Onions

  • 1 large red onion
  • 5 cups boiling water
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tsp salt
  • 5 Tbsp sugar
  • 2 tsp whole black pepper

 

Peel and slice onions and transfer to a large bowl. Add the boiling water and let the onions sit for 5 minutes and drain. In another large bowl, combine the remaining ingredients and mix well. Add the onions and let them sit for 10-15 minutes. Transfer the onions to a jar and store in theĀ fridge.

Directions

Preheat oven to 400 degrees.

Cook Brussels sprouts according to package directions.

Cut the baguette into slices and lightly brush both sides with olive oil. Place onto a baking sheet and bake for 5 to 8 minutes, until bread is crispy.

Remove the bread from the oven and spread goat cheese over each piece. Roughly chop the brussels sprouts and add to each slice of bread. Top with pickled red onions and enjoy!
