Blue Belle layered Potato Cake
Vegetarian, Vegan, Gluten-Free and Dairy free!
High in potassium, good source of Vitamin C and loaded with fibre!
10 EarthFresh Blue Belle Potatoes
¼ cup coconut oil, melted
1 tbsp. dried thyme
½ tsp salt
Preheat oven to 400 degrees F
Wash and dry the potatoes. Slice the potatoes carefully using a mandolin and place the potatoes into a large bowl. Add the melted coconut oil, dried thyme and salt. Mix generously ensuring the potatoes are evenly coated.
Using a cast iron skillet arrange sliced potatoes in a platter overlapping them slightly. Continue until you have about seven layers of potatoes. Place the skillet in the oven and bake for 30-40 minutes until potatoes are golden brown and crispy. Potatoes will be cooked when fork tender. Remove form oven and slice into 8 pieces. Serve immediately and enjoy.
