Potato & Tuna Salad
High in potassium, good source of Vitamin C and low in fat!
This salad is Gluten-Free and a healthy lunch or dinner optionIngredients:
1.5 lbs EarthFresh boiling potatoes, cut into chunks
2 large tomatoes
1 Can of tuna
1/2 lb green beans, halved
2-3 handfuls of arugula
2 tbsp pesto
4 tbsp olive oil
Salt and pepper to tasteDirections:
Clean and peel potatoes and place in a pot of cold, salted water - bring to a boil. When fork tender, drain and let cool.Tip: Try checking the potatoes with a fork.
Cook beans accordingly. Mix the pesto and oil to make a dressing. Cut the tomatoes in chunks, then drain and flake the tuna.
Incorporate all ingredients together, drizzle with the pesto and gently mix everything together. Season with salt and pepper.
Serve and enjoy!
