Apple Cider Dijon and Candied Garlic Mashed Potatoes
Yields: 6 servings
10 EarthFresh PolarWhite potatoes
2 cup water
¼ cup white sugar
16 garlic cloves, peeled
1 tbsp. (15ml) olive oil
1 tsp. (5ml) fresh garlic, minced
Apple Cider Dijon Vinaigrette
2 tbsp. (30ml) olive oil
1 tbsp. (15ml) white balsamic vinegar
1 tbsp. (15ml) apple cider vinegar
2 tbsp. (30ml) honey
1 tbsp. (15ml) Dijon mustard
2 tsp. (10ml) lemon juice
In a small bow whisk together the olive oil, white balsamic vinegar, apple cider vinegar, honey and Dijon mustard and lemon juice. Set aside.
Wash, dry and cut potatoes into even chunks. Place potatoes into a large pot of cold salted water and bring to a boil over high heat. Reduce heat to a medium and continue cooking until potatoes are fork tender. Drain potatoes and transfer to a medium bowl. Lightly mash the potatoes until smooth and lump free. Set aside.
To make the candied garlic, place the water, sugar and the whole garlic cloves into a medium pot and bring to a boil, reduce heat and simmer for 15 minutes. Using a slotted spoon transfer the garlic cloves to a plate. set aside. Add the olive oil to a small pan and heat over medium heat, add the minced garlic and whole garlic cloves that have been set aside and sauté for 3 minutes. Set aside.
To assemble, gently stir in the Apple Cider Dijon Vinaigrette into the bowl of mashed potatoes, garnish with the Candied Garlic. Serve Warm.
