White Truffle Parmesan Mashed Potatoes
4 lbs. EarthFresh Yellow Potatoes – Best for Mashing
¾ cup half and half cream
¼ cup butter
1 Tbsp olive oil
1 Tbsp white truffle oil
½ cup parmesan - shredded
Salt to taste
Wash, peel and cut potatoes into even pieces. Place potatoes in a large pot of cold, salted water, and bring to a boil. When potatoes are fork tender, remove, drain and pass potatoes through a potato ricer.
Add cream, butter, olive oil, truffle oil, salt and gently mix. Serve and enjoy!
