Whipped Herbed Potato shooters with Parmesan Cream Sauce
Wow your dinner guests with these fun mashed potato shooters!

6 cups EarthFresh Yellow potatoes – Best for Mashing
1 cup (250 ml) fresh dill, chopped
1 cup (250 ml) fresh chives, chopped
2 Tbsp (30 ml) butter
1 Tbsp (15 ml) half-and-half cream 10 %MF
Wash, peel and chop the potatoes. Place in a pot of cold, salted water and bring to a boil. When potatoes are fork tender, remove, strain and place in a large bowl. Add the chopped dill, chives, butter and cream. Mash until the potatoes are smooth and all the ingredients are well incorporated.
Using a piping bag, fill the bag with the herbed potato mixture. Set aside.
Parmesan Cheese Sauce:
3 Tbsp (45 ml) butter
3 Tbsp (45 ml) all purpose flour
1 ½ cups (375 ml) whole milk
½ cup (125 ml) half-and-half cream 10 %MF
2 cups (500 ml) shaved parmesan cheese
Melt the butter in a saucepan over medium heat. Add the flour and whisk until light brown in color. Add the milk and cream and whisk over medium - high heat for 2 minutes. Turn the heat down and add the parmesan cheese. When the cheese is melted and well blended, set aside.
Line up the shot glasses and pipe in each glass until half full the whipped herb potatoes, add a a few spoonful’s of the parmesan cheese sauce followed by another layer of whipped herbed potatoes. Garnish with fresh dill.
