Sweet and Spicy Smashed Potatoes
Makes 4 Servings

1.5 lb bag of EarthFresh Organic Yellow Baby Potatoes
1 tbsp. (15ml) olive oil
Mixed greens - desired amount
Red pepper flakes for garnish - desired amount
Tangy Sweet Heat Dressing:
2 tbsp. (30ml) olive oil
1 tbsp. (15ml) apple cider vinaigrette
1 tbsp. (15ml) honey
1 tbsp. (15ml) sriracha
1 tsp. (5ml) lemon juice
1 tsp. (5ml) chili flakes
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, sriracha, lemon juice and chili flakes. Set aside.
Preheat oven to 350°F (177°C).
Place the potatoes into a bowl, add the olive oil and mix until well incorporated. Transfer the potatoes to a baking sheet and place into the oven. Roast for 40-50 minutes until potatoes are golden brown. Remove the potatoes from the oven and allow to cool for 5 minutes.
Using a spatula or large spoon, lightly press down on each potato to smash to about 3/4 inch thickness.
Transfer the potatoes onto a bed of mixed greens. Evenly pour the Tangy Sweet Heat Dressing oner the potatoes and garnish with red pepper flakes (optional).
