Sun-Dried Tomato Pesto Mashed Potatoes

6 EarthFresh Potatoes of the World Yukon Gold potatoes
3 tbsp PC Black Label Sun-Dried Tomato Pesto
¼ cup chopped PC Splendido Sun-Dried Tomatoes in Seasoned Oil
½ tsp salt
Wash and peel potatoes, then cut into quarters. Add potatoes to a large pot of cold, salted water and bring to a boil. Cook until potatoes are fork tender, roughly 20-25 minutes. Remove from heat, strain water and transfer potatoes to a bowl.
Add PC Black Label Sun-Dried Tomato Pesto, chopped PC Splendido Sun-Dried Tomatoes in Seasoned Oil and salt to the bowl of potatoes. Mash to incorporate ingredients.
Transfer mashed potatoes to a serving bowl. Enjoy.
