Straight Up Baked Potato

Prep Time 5 Minutes | Cooking Time 50 Minutes

Makes 4 Servings

Ingredients:

4 EarthFresh Russet potatoes- Best for Baking

1 tbsp. (15 mL) olive oil

4 tbsp. (60 mL) low-fat sour cream

4 tbsp. (60 mL) chopped cilantro


Directions:

Preheat oven to 350°F (177°C).

Wash, dry and lightly brush each potato with olive oil. Wrap each potato in tin foil and place potatoes directly into the oven. Bake for 50 minutes. Remove baked potatoes from the oven and allow to cool for 10 minutes before removing tin foil.

Remove tin foil from the potatoes and transfer each potato to a serving plate. Using a knife, slice each potato in half and gently squeeze to open the potato. Add 1 tbsp. (15 mL) of low-fat sour cream to each potato and garnish with fresh cilantro. Enjoy.
