Smoked Paprika Roasted Minis
2.5 lbs. EarthFresh Mini Red Potatoes
10 Garlic cloves
1/2 cup olive oil
1 tsp smoked paprika
2 TBSP. fresh rosemary leaves
1 TBSP. sea salt
In a small saucepan add whole cloves of garlic with enough oil just to cover them. Heat over medium heat and let the cloves cook for 45-60 minutes – do not brown the garlic.
Toss the potatoes in a large bowl with 2 tablespoons of olive oil and the cooked garlic – mix while smashing up the pieces of garlic. Add the smoked paprika, sea salt, pepper and rosemary.
Place potatoes on a pan dish and roast at 350oF until cooked and nicely browned – about 45 minutes to an hour.
Remove, place in a serving plate and enjoy!
