Smashed Potatoes with Creamy Greek Yogurt Blue Cheese Sauce
1.5 lb bag of EarthFresh Baby Red Potatoes
1 Tbsp olive oil
8 garlic cloves, whole
¼ cup Greek yogurt
½ cup crumbled blue cheese
Preheat oven to 350° F.
Wash and dry potatoes. Place the potatoes, olive oil and garlic cloves into a large bowl. Toss to incorporate all ingredients. Transfer potatoes to a baking dish and roast for 40 minutes. Potatoes will be done when fork tender and golden brown. Remove from the oven and allow to cool for five minutes.
While the potatoes are cooling, mix the Greek yogurt and crumbled blue cheese together. Set aside.
Using a spatula or large spoon, lightly press down on each potato to smash to about 3/4 inch thickness.
Spoon the Greek yogurt and blue cheese mixture over top of the smashed potatoes or use as a dip. Serve with your favourite protein and enjoy!
