Smashed Potato Salad with Avocado Dressing
High in potassium, good source of Vitamin C, low in fat, Vegetarian and Gluten-Free!/font>
This recipe is a healthier alternative to the traditional creamy potato salad.
Yields 4-6 servings
6 EarthFresh White Potatoes-Best for Boiling
½ avocado, chopped (the other half is used for the dressing)
2 tbsp. fresh cilantro, chopped
Wash, dry, peel and cut potatoes in to small even pieces. Place the potatoes in to a large pot, and cover with cold, salted water. Bring to a boil, reduce heat to a medium-low, cover and simmer until tender, roughly 15 minutes. Drain and transfer the potatoes to a medium bowl, add the Avocado dressing to the bowl of potatoes and lightly smash. Garnish with fresh Avocado and cilantro.
¼-cup Greek yogurt
¼ cup water
½ cup fresh cilantro
1 garlic clove
1 tbsp. lemon juice
1/8 tsp. sumac
1/8 tsp. sea salt
Add all ingredients to a food processor and pulse until the ingredients are well incorporated, remove and scape into a small bowl, set aside.
