5lb EarthFresh Yellow Potatoes: Best for Mashing
2 onions, thinly sliced
2 Tbsp butter
2 Tbsp all-purpose flour
3 cups whole milk
1 cup vegetable broth
2 Tbsp chopped fresh thyme
1 tsp salt
1 tsp pepper
Preheat oven to 350°F.
Wash, dry and thinly slice potatoes using a mandolin. In a quiche pan, arrange the potatoes and onions in layers. Finish the last layer with sliced potatoes.
In a small pot, over medium heat, melt the butter. Add flour and whisk. Slowly add in milk, vegetable broth, chopped thyme, salt and pepper. Whisk well. Reduce heat and simmer for 10 minutes or until slightly thickened.
Pour thickened milk mixture over the potatoes and bake for 50 minutes or until potatoes are golden brown and fork tender.
Remove from oven and serve immediately. Enjoy!
