Rosemary and Garlic Roasted Potatoes
1.5 lb EarthFresh Baby Organic Yellow potatoes
4 Tbsp olive oil
4 rosemary sprigs
1 whole garlic head
Heat the oven to 400°F.
Clean the potatoes and place in a baking dish with the olive oil. Sprinkle salt and toss potatoes to coat. Place rosemary over the potatoes.
Peel the outer layers of the whole garlic bulb and cut the top of the cloves off, leaving the individual cloves of garlic exposed - about 1/4" to 1/2" off the top. Rub cloves with olive oil, wrap in tin foil and place in the baking dish with the potatoes.
Roast for 40-45 minutes - until potatoes are crispy and fully cooked.
Remove from oven and transfer potatoes onto a serving dish. Carefully open up the garlic and place cloves over the potatoes. Serve and enjoy!
