Roasted Rosemary Fingerlings
Yields 4-6 servings
1.5 lb. bag of EarthFresh Yellow Fingerlings
1 Tbsp olive oil
2 Tbsp fresh rosemary, chopped
½ tsp Salt
Pre heat over to 375 degrees F
Wash and dry the potatoes. Place potatoes, olive oil, fresh rosemary and salt into a medium bowl and toss, coating potatoes evenly.
Transfer potatoes to a small roasting pan and roast in the oven for 30-40 minutes, turning once. Bake until potatoes are crisp and golden brown. Potatoes will be done when fork tender. Remove form oven when cooked, place potatoes into a serving dish, and enjoy!
Potatoes can be stored in the refrigerator for up to three days.
