Roasted Red Potatoes with cranberries and walnuts
8 EarthFresh Red Potatoes - Best for Roasting, sliced ¼ inch in thickness
1 onion, sliced
1 Tbsp (15 ml) olive oil
½ tsp (2.5 ml) salt
½ cup (125 ml) dried cranberries, reserving 2 tablespoons (30 ml)
½-cup (125 ml) walnut pieces, reserving 2 tablespoons (30 ml)
Preheat oven to 350oF
Wash and dry potatoes. Cut the potatoes into ¼-inch thick slices and place in a large bowl. Add the onions, olive oil, salt, dried cranberries and walnut pieces, mix to incorporate all ingredients.
Line a baking pan with parchment paper and add the potato mixture. Cover with tin foil and bake for 30 minutes.
Once the potatoes have cooked for 30 minutes, remove the pan from oven and discard the tin foil. Place the potatoes back into the oven and continue baking for another 10 minutes.
Remove from oven and gentle scoop the potatoes into a serving dish. Garnish with cranberries and walnuts, serve immediately and enjoy!
