Roasted Red Baby Potatoes with Chimichurri Sauce

Makes 6 Servings
1.5 lbs bag of EarthFresh Organic Red Baby Potatoes
1 Tbsp olive oil
¼ cup chopped fresh parsley
3 Tbsp chopped fresh oregano
3 Tbsp chopped fresh cilantro
2 tsp minced garlic
2 tsp crushed red pepper flakes
1 tsp lemon juice
1 tsp salt
1 tsp pepper
3 Tbsp red wine vinegar
½ cup olive oil
In a medium bowl, add the chopped parsley, chopped oregano, chopped cilantro, minced garlic, crushed red chilli flakes, lemon juice, salt, pepper, red wine vinegar and olive oil. Stir to incorporate all ingredients. Set aside.
Preheat oven to 300°F.
Wash and dry the potatoes. Take half of the potatoes and cut them into halves. Add all the potatoes into a medium bowl and toss with olive oil. Transfer the potatoes to a baking sheet and carefully place each potato skin side down. Allow potatoes to cook for 15 minutes.
After 15 minutes, turn each potato flesh side down and roast for another 15 minutes.
Remove potatoes from the oven and place on a serving platter. Garnish with Chimichurri Sauce. Enjoy!
