Roasted Honey Glazed Potatoes and Garlic with Avocado
Makes 4 Servings
Prep Time 15 Minutes | Cooking Time 40 Minutes
1.5 lb bag of EarthFresh Mini Yellow Potatoes
10 cloves of garlic, peeled
2 tbsp. (30 mL) olive oil
2 tbsp. (30 mL) honey, divided
2 tsp. (10 mL) chili powder
1 tsp. (5 mL) salt
1 avocado, peeled, pitted and sliced
2 tbsp. (30 mL) fresh cilantro, chopped
Preheat BBQ to 350°F (177°C).
Wash, dry, and cut the potatoes in half. In a large bowl toss together the potatoes, garlic cloves, olive oil, honey, chili powder and salt.
Spread the potato and garlic mixture evenly onto a baking sheet and place into the pre-heated oven. Roast for 30-40 minutes until the potatoes are fork tender and golden brown.
Remove the roasted potatoes and garlic form the oven and transfer to a serving dish. Add the sliced avocado and drizzle with the reserved honey. Garnish with fresh cilantro.
