Roasted Garlic and Brown Butter Mashed Potatoes

6 cups of EarthFresh Best for mashing Potatoes-cut into even pieces, leaving skins on
1/3 cup of butter
4 garlic cloves - roasted
1 tsp (5 Ml) olive oil
2 Tbsp (30 Ml) of crème- 10%MF
½ tsp (2.5 Ml) of salt
Brown Butter:In a medium saucepan, add the butter and cook over medium-high heat and cook for 6-8 stirring constantly, continue this for 6-8 minutes until butter turns brown and gives off a nutty aroma, skim foam as necessary. Remove pan from the heat and set aside.
Heat oven to 400F
Using a sharp knife cut the top off the head of garlic, exposing the bulbs. Drizzle the garlic with olive oil and lightly salt. Wrap in tin foil and bake in the oven for 45-60 minutes.
Remove garlic from oven and let cool completely before removing from foil. When cool enough to handle, squeeze the garlic clove into a bowl.
In a large pot of cold salted water, add the potatoes and bring the water to a boil. Cook the potatoes for 5-8 minutes until thoroughly cooked. Remove the pot from the stove and strain the potatoes using a strainer. Place the potatoes in a large bowl and add the brown butter, roasted garlic gloves, cream and salt. Mash the potatoes until desired texture and serve immediately.
