Pulled Pork Nachos

Makes 10 servings
4 EarthFresh Russet Potatoes: Best for Baking
2 Tbsp olive oil
2 cups pulled pork
½ cup BBQ sauce, any brand
1 package fresh coleslaw mix
3 Tbsp canola oil
1 Tbsp rice vinegar
1 tsp salt
1 tsp pepper
1 jalapeno, sliced
Preheat oven to 350°F.
Wash, dry and slice potatoes using a mandolin. In a large-sized bowl, add the sliced potatoes and olive oil. Toss to coat evenly. Set aside.
In a medium-sized bowl, mix pulled pork with BBQ sauce. Set aside.
In another medium-sized bowl, stir together the fresh coleslaw mix, canola oil, rice vinegar, salt and pepper. Set aside.
Transfer potatoes to a parchment paper lined baking sheet, spread carefully as not to overlap and place into the oven.
Bake for 40 minutes or until potatoes are crispy and golden brown. Remove from oven and top with pulled pork and coleslaw. Garnish with sliced jalapeños. Enjoy!
