Potato Spread - with Roasted Red Peppers and Artichoke Hearts
Serve this with fresh veggies, bread or your favourite crackers.
High in potassium, good source of Vitamin C, loaded and fibre and Vegetarian!
3 EarthFresh Yellow Potatoes – Best for Boiling
1 large roasted red pepper
4 artichoke hearts- from a jar
1 TBSP of butter
1 TBSP of Cream
1 TBSP of Cream cheese
2 TBSP of Parmesan cheese
Salt to taste
Place potatoes in a pot of cold salted water and bring to a boil - until fork tender. Drain and set potatoes aside to cool. When cooled, lightly mash and add the potatoes to a blender with all the remaining ingredients. Blend until well incorporated and you have a smooth texture.
Transfer into a container and allow to cool. Using your favourite cracker or bread, spread potato mixture and finish off with fresh parsley and sliced cherry tomato.
Can be stored in the fridge for up to three days. Enjoy.
