Potato Salad with Yogurt and Dill

Makes 8-10 servings
8 EarthFresh White Potatoes: Best for Boiling
¼ cup Greek yogurt
3 Tbsp diced celery
2 Tbsp diced red onion
2 Tbsp chopped fresh dill
Wash, dry, peel and chop potatoes. Add potatoes to a large pot of cold, salted water and bring to a boil. Cook until potatoes are tender but still firm (roughly 7-10 minutes). Strain water from the potatoes and place in a medium-sized bowl.
In the bowl of cooked potatoes, add the Greek yogurt, diced celery, diced red onion and chopped fresh dill. Toss to coat evenly. Serve and enjoy!
