Potato Power Balls

Makes 24 balls
4 EarthFresh Vitality Potatoes
1 ½ cup rolled oats, uncooked
1 cup natural crunchy peanut butter
½ cup sweetened shredded coconut
½ cup pitted and coarsely chopped medjool dates
¼ cup mixed dried fruit blend
¼ cup semi-sweet chocolate chips
½ cup liquid honey
2 Tbsp ground chia seeds
2 Tbsp ground flax seeds
Wash, dry, and cut the potatoes into small, evenly-sized pieces. In a large pot, place the potatoes into cold, salted water and bring to a boil. Reduce heat and cook potatoes until fork tender (roughly 7-10 minutes). Remove and strain water from the potatoes.
Transfer the cooked potatoes to a medium bowl and lightly mash. Set aside, allowing them to cool completely.
In a large bowl, stir together the uncooked rolled oats, natural crunchy peanut butter, sweetened shredded coconut, medjool dates, mixed dried fruit, semi- sweet chocolate chips, liquid honey, chia and flax seeds.
Add the potatoes to the rolled oats mixture and continue to stir, incorporating all ingredients. On a flat surface roll the mixture into a ball, cover it with plastic wrap and refrigerate for one hour. Remove the mixture from the refrigerator and roll into balls, about 1-inch (2.5 cm) in diameter.
For storage, use a parchment lined air-tight container. The Potato Power balls can be stored in the refrigerator for up to 3 days. Unused portions can be frozen for up to three months. Enjoy!
