Potato Gratin with Cranberries and Feta
Yields 8 servings
3 lbs of EarthFresh Yellow Organic Potatoes
1 yellow onion, sliced into rings
1 cup fresh cranberries
3 tbsp. (45ml) butter
3 tbsp. (45ml) all-purpose flour
2 cup 2% milk
1 tsp. (5ml) brown sugar
½ tsp. (2.5 ml) salt
½ tsp. (2 ml) pepper
½ tsp. (2.5ml) nutmeg
½ cup feta cheese, crumbled
Preheat oven to 350 degrees F (180 degrees C).
Wash and dry the potatoes. Slice the potatoes into ¼ inch slices and set aside.
Lightly grease a casserole dish and layer the potatoes into the bottom of the dish. Top with the onion slices and the cranberries. Repeat this step until you’ve reached the top of your casserole dish. Set aside.
In a saucepan, melt the butter over medium heat. Mix in the flour and whisk for one minute. Stir in the milk, add the brown sugar, salt, pepper and nutmeg and cook until the mixture has thickened. Add the feta cheese and continue to stir for another minute. Pour the mixture over the potatoes, cover the dish with aluminum foil and bake for 60 minutes.
Remove and serve immediately. Enjoy!
