Pancetta and Aged Cheddar Twice-Baked Potatoes

Makes 8 servings
4 EarthFresh Russet Potatoes: Best for Baking
1 Tbsp olive oil
½ cup chopped pancetta, cooked
1 Tbsp butter
¼ cup whole milk
1 tsp salt
1 tsp pepper
½ cup aged cheddar cheese
2 Tbsp chopped fresh chives
Preheat oven to 350°F.
Wash, dry and slice each potato in half. Lightly brush each potato skin with olive oil. Place potatoes onto a baking sheet, place into the oven and bake for 50 minutes. Potatoes will be done when fork tender. Remove baked potatoes from the oven and allow to cool for 10 minutes.
Carefully scoop the flesh out of each potato and place into a medium bowl. Stir in cooked pancetta, butter, milk, salt, pepper and aged cheddar cheese.
Divide the mixture amongst each potato skin, place back into a pre-heated oven and bake for an additional 10 minutes.
Remove from oven, transfer to a serving platter and garnish with chopped fresh chives. Enjoy!
