Orange Maple Mini Roasters
Yields: 6 servings
1.5 lb bag of EarthFresh Yellow Baby Organic Potatoes
1 tbsp. (15ml) olive oil
Orange and Maple Dressing:
1 tbsp. (15 ml) olive oil
1 tbsp. (15ml) white wine vinegar
2 tbsp. (30ml) orange juice
1 tbsp. (15ml) maple syrup
2 tbsp. (30 ml) fresh rosemary, minced
In a small bowl, whisk together the olive oil, white balsamic vinegar, orange juice and maple syrup. Set aside.
Pre – heat oven to 400 degrees F (200 degrees C).
Wash and place the potatoes into a bowl, add the olive oil and mix until well incorporated. Transfer the potatoes to a baking sheet and place into a pre-heated oven. Roast for 40-50 minutes until are potatoes are fork tender and golden brown.
Remove the potatoes from the oven and transfer to a serving dish. Stir in the Orange and Maple dressing and garnish with fresh rosemary. Serve warm and enjoy!
