Orange and Maple Holiday Mashed
Yields: 8 servings
10 EarthFresh PolarWhite potatoes
2 tbsp. (30ml) olive oil
1 tbsp. (15ml) white balsamic vinegar
2 tbsp. (30ml) orange juice, from an orange
1 tbsp. (15ml) maple syrup
2 tbsp. (30ml) fresh rosemary, minced
Zest from one orange
Orange and Maple Dressing:
In a small bowl, whisk together the olive oil, white balsamic vinegar, orange juice and maple syrup. Set aside.
Wash, dry and cut potatoes into even chunks. Place potatoes into a large pot of cold salted water and bring to a boil over high heat. Reduce heat to a medium and continuing cooking until potatoes are fork tender. Drain potatoes and transfer to a medium bowl. Lightly mash the potatoes until smooth and lump free. Stir in the Orange and Maple dressing, transfer the potatoes to a serving bowl and garnish with fresh rosemary and orange zest.
