Mini Yellow Potatoes with Dill Butter
Vegetarian and Gluten-Free
High in potassium, good source of Vitamin C and loaded with fibre!
1.5 lb bag of EarthFresh Mini Yellow Organic Potatoes
1 Tbsp butter
1 Tbsp caraway seeds
½ cup fresh dill, chopped
¼ cup slivered almonds
In a small pan over medium heat, add the slivered almonds and lightly toast for 6-8 minutes. Toss frequently, being careful not to burn the almonds. When nicely toasted and browned, remove and set aside.
Add potatoes to a pot of cold, salted water and bring to a boil. Cook potatoes until fork tender, roughly 7-10 minutes. Remove and strain the potatoes, and place in a large bowl.
Add butter, caraway seeds, fresh dill and toasted almonds. Toss the potatoes to coat evenly.
Serve and enjoy!
