Mini Red and White Middle Eastern Potato Salad
High in potassium, good source of Vitamin C and low in fat!
This salad is Vegetarian and Gluten-Free!
1.5 lbs EarthFresh Red and Yellow Baby Organic Potatoes
1/2 tsp of cumin
1/2 tsp of coriander
1/2 tsp of cinnamon
1/2 tsp of paprika
1/2 tsp of marjoram
1/2 TBSP of freshly squeezed lemon juice
1/4 cup chopped red onion
2 TBSP of freshly chopped mint
1 TBSP of olive oil
Place potatoes in a pot of cold salted water and bring to a boil - until fork tender. Drain and set potatoes aside to cool.
Once cooled, cut into quarters and place in a bowl. Add oil, spices and gently mix. Add all remaining ingredients and continuing mixing until all ingredients are well incorporated. Serve cold or warm!
