Mediterranean Potato Pasta
Vegetarian, Vegan and Gluten-Free!
High in potassium, good source of Vitamin C and loaded with fibre!
3 large Earthfresh Russet potatoes
8-10 black olives - pitted and sliced
8-10 cherry tomatoes - sliced
1/3 cup of crumbled Feta cheese
1 TBSP of olive oil
2 TBSP of freshly chopped oregano
Salt to taste
Wash and peel potatoes. Using a vegetable spiralizer, make thick shoestrings pieces and add to a pot of boiling water. Boil for 5 minutes until el dente and immediately plunge shoestrings into a bowl of ice cold water.
Strain and pat dry using paper towel- place in a medium bowl. Add olive oil, olives, tomatoes, cheese and oregano and salt, lightly toss. Serve in a bowl and enjoy!
