Lemon Rosemary Roasted Fingerlings
1.5 lbs. EarthFresh Yellow Fingerlings
1/2 cup fresh lemon juice
1 lemon - cut into thin slices
2 Tbsp olive oil
1 bunch fresh rosemary
1/2 tsp garlic powder
Sea salt to tasteDirections:
Preheat oven to 375°F
Cut potatoes lengthwise and place in a pot of cold, salted water and bring to a boil. Remove potatoes once water starts boiling. You just want to par-boil the potatoes to cut roasting time down.
In a small bowl, add olive oil and lemon juice. Add potatoes and mix until all the potatoes are coated. Place potatoes on a baking sheet, add lemon slices and rosemary.
Bake for 30 minutes - until potatoes are nicely roasted. Remove the rosemary and lemon pieces, and sprinkle with sea salt. Serve and enjoy!
